Vegetable Stew for Weight Loss

Ingredients

  • 1 head of broccoli, divided into florets

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 1 orange pepper, diced

  • 1 carrot, grated

  • 1 zucchini, sliced

  • 2 ½ dl cherry tomatoes, halved

  • 2 cloves garlic, finely chopped

  • 2 ½ dl light cheese (mozzarella or cottage cheese)

  • 2 ½ dl low-fat milk

  • 2 eggs

  • Salt and pepper, to taste

  • 1 tsp dried basil

  • 1 tsp dried oregano
